Monday, My Mom & Memories

It is hard to believe that is has been 5 months ago today that I lost my precious Mom. I miss her very much, but I feel so blessed that I had her for 35 wonderful years.


God Saw You Getting Tired

Vanessa, Steve & Isabella live in Florida and are very good friends of my friend Natalie's.
Vanessa is 25 weeks pregnant and having major complications. She was put into the hospital this weekend for at least the next 3 weeks and is on bed rest. I know that as a mother, not only is Vanessa worried about the baby girl she is carrying, but also about her little Isabella that she is leaving behind, while she is in the hospital. Let's keep her in our prayers....

Two more great games of soccer today... I was able to go to both of the boys game, we ran a lot, but it was lots of fun. Then we went with Geema and some friends from school up to the church BBQ, Chef Mike had YUMMY ribs :) Then off to the neighborhood school carnival and home to have dinner with our good friends, Matt, Julie, Emma, Ellie & Matt. We had chips and salsa and cheese dip for a snack, then pasta, bread and salad for dinner, with a YUMMY pumpkin pie cake(see below), with homemade whipped cream for dessert :)

Pumpkin Pie Cake

4 eggs, beaten well
1 16-ounce can (2 cups) pumpkin
1 14-ounce can Milnot
1 ½ cups sugar
2 tsp pumpkin pie spice
Nonstick cooking spray
1 18 ½-ounce yellow cake mix
1 cup(2 sticks) margarine/butter melted
Chopped walnuts (optional)

Mix first 5 ingredients with electric mixer
Pour into 9X13 inch glass pan sprayed with nonstick spray
Sprinkle dry cake mix over top
Pour 1 cup melted margarine/butter over top.
(optional) Sprinkle walnuts over the top.
Bake at 350 for 1 hour or until top is brown
*Serve with whipped cream
